Il Rosmarino
Il Rosmarino
Il Rosmarino - trattoria and pizzeria - is an ode to the time-honored tradition of homely Tuscan cooking. Here, simplicity becomes sublime and the understated decor allows the delicate balance of humble yet heavenly flavors to shine. On the menu: succulent bistecca alla Fiorentina, wide ribbons of handmade pasta entwined with rich, velvety sauces that echo the changing seasons, and the crisp perfection of wood-fired pizzas. Our suggestion is to pair a glass of Castelfalfi organic wine with every dish you decide to taste. "Tradition is culture, cuisine is art."
Olivina
Olivina
Olivina is an intimate and elegant restaurant where cuisine is inspired by the land surrounding Castelfalfi. Following the rhythm of the seasons, Chef Matteo Cervini celebrates the purity of local ingredients sourced from our garden and nearby producers, transforming them into refined dishes that reflect the landscape and its authenticity. The name pays tribute to the vineyards and olive groves of these hills, as well as to the green gem cherished by the Etruscans.
UMMI
UMMI
On the Medici Terrace of our medieval Castle, a new dining experience comes to life, inspired by the meeting of Tuscany and Lebanon. The concept pays tribute to the Lebanese prince Fakhr al-Din II, known in Tuscany as Faccardino, who was welcomed by the Medici in the 17th century and became closely connected to the hills of Castelfalfi during his journeys between Pisa and Florence.
Amid spicy aromas and soft lighting, UMMI celebrates an authentic and convivial cuisine, where za’atar meets Tuscan extra virgin olive oil in a refined dialogue between two cultures. Leading this experience is Chef Hussein Hadid, an interpreter of elegant, contemporary, and deeply evocative Lebanese cuisine.
